Louisiana State Crustacean

Louisiana State Shell and Crustacean

Louisiana doesn’t have a state shell. However, the Eastern oyster was designated its official cabachon gemstone.

Louisiana’s official crustacean, the crawfish, is a familiar native. (Its name is more commonly spelled crayfish.) Southern Louisiana is said to be the crawfish capital of the world. The two species that are commonly harvested are the red swamp crawfish and white river crawfish.

Can you guess what crawfish are used for? Food! Any animal that looks like a miniature lobster has to taste good.
