New Mexico has two official vegetables, and they’re inseparable—chile & frijole.
Chiles are the spicy “chili peppers” that are so popularly associated with Mexican food and salsa. Frijoles are beans, though New Mexico specifically adopted pinto beans.
Incidentally, chiles are usually red or green, prompting New Mexicans to adopt an official question: “Red or green?”
